Easy Potato salad recipe
Ingredients for 4 persons:
800 g red potatoes (cooked, peeled & cut into chunks)
1 pc onion chopped
1 yellow bell pepper (cut into cubes)
4 tbspoon extra virgin olive oil
2 tablespoon cider vinegar
1 tablespoon dijon mustard
freshly cut chives & basil leaves
salt & ground black pepper to taste
How to prepare:
Place potatoes in a saucepan. Add water and 1 teaspoon of salt. Cover and cook for about 12-15 mins or until potatoes are done. Drain and transfer to a bowl. Add chopped onions, bell pepper, freshly cut chives & basil leaves. Cover and set aside.
Prepare the vinaigrette dressing:
In a bowl whisk mustard and 2 tablespoon of cider vinegar. Add olive oil, salt and pepper and stir until well blended. Pour the vinaigrette into the potato mixture and stir gently. Refrigerate before serving.
