In France "Gallette de Rois" is traditionally eaten during the Feast of the Epiphany or Three Kings.Ingredients:
2 ready-made puff pastry
80g butter (melted)
80g sugar
160g ground almonds
3 eggs
4 tbsp creme fraiche
1 tbsp rum or (aromes de fleurs d'oranger)
Preparation:
1) In a bowl mix together sugar, butter, eggs and ground almonds. add the creme fraiche and rum then mix thoroughly.
2) Cover the baking pan with the pastry then spread the mixture in the middle. Add the féve and covered with the other pastry left.
3) Press the edges together to seal then brush the surface with egg yolk and baked at 200°C for 25 minutes.
